Most of what I know of saints I learn from Phyllis' postings. And, yes, Denis (unspecified as to which one) is a patron saint of those suffering from headaches. See:

Unless I'm terribly confused (not unlikely), Nicaise of Reims is also a saint who was decapitated and, I believe, is depicted holding his head. However, I don't think he was reputed to have carried it in his hands and walked about with it.
