A brilliant book is entitled 'The Sea Fisheries of England' edited by John
Starkey et al, and published by Chatham Books. A few chapters exist on
Mediaeval fisheries, and there are quite good references. You will quickly see
that there is very little written on this matter--the fisheries are poorly
understood, although there are tantalisingly good snapshots of a sophisticated
fishery from the archaeological record, historical sources, and occasionally
even the political documents of the time. The people at Kingston-upon-Hull,
particularly Starkey and Robb Robinson, have done a large amount of work on
the fisheries although generally focusing on the historical records from later
periods. A lady at Leeds also does a fair amount on Mediaeval fisheries, but I
am afraid that her name suddenly escapes me.
