There was a discussion of the bibliography of the Justinian plague a
few years ago on LT-ANTIQ. See:
http://omega.cohums.ohio-state.edu:8080/hyper-lists/lt-antiq/99-10-01/index.html#89
You might also find something of interest in the "Those dark Dark
Ages" thread on Classics-l from the next year:
http://omega.cohums.ohio-state.edu:8080/hyper-lists/classics-l/00-12-01/index.html
and in this article from the Chronicle of Higher Education:
http://omega.cohums.ohio-state.edu:8080/hyper-lists/lt-antiq/02-03-01/0022.html
The first entry in the bibliography at this Justinian page looks promising:
http://www.roman-emperors.org/justinia.htm
as does Evans, J. A. S. _The Age of Justinian: The Circumstances of
Imperial Power_ (Routledge, 1996), which according to the library
catalog entry discusses the plague in its third chapter.
Sorry I wasn't able to turn up any conference proceedings, but that's
not to say they're not out there. You might consider posting your
request to LT-ANTIQ to get the latest information from the experts
there.
