There are a couple of sources of information that might be
useful (though not the actual accounts of genuine Aurochs
you wanted):
There is an edited volume of papers that are on the Aurochs
that include some studies of Aurochs cross-breeds and
attempted back-breeds. Some papers are in English, but
those ones are in German:
Weniger, G-C. 1999 "Archaeologie und Biologie des
Auerochsen." Neanderthal Museum.
A.J. Legge and P.A. Rowley-Conwy (1988) in "Star Carr
Revisited" (published by Birkbeck College, London)
speculate on the behaviour of Aurochs and discuss the known
behaviour of Bison, both American and European. They refer
to a paper that does quote sources on the actual behaviour
of Bison bonasus in the wild. That is also information that
is difficult to obtain. That paper is:
