For my PhD thesis in 1980 I looked at over a 100 medieval illustrations of pig butchering. Almost all illustrations are in medieval calendars and depict the activities in the autumn months. On ca. 75 illustrations of pig killings there is only one 14th century illustration of sticking a pig and collecting the blood. On 15th/16th century Dutch paintings and engravings however you can see the pig lying on its side, a man sticking the animal through its carotic artery and a woman holding a handled pan under the wound to collect the blood. Black pudding (Dutch bloedworst) is still a favorite Dutch recipe.
