Sarah,
You may find the Science Museum's document "Requirements for Museum
Computer Exhibits" at www.sciencemuseum.org.uk/documentation useful.
We don't use mice and standard keyboards as they tend to last about 15
minutes with our rather rough audience - although
I have seen them used successfully in more gentle environments such as the V
& A.
We buy touchscreens from a company called datasonic - they will also sell
you a complete kiosk with a touchscreen and computer. (www.datasonic.co.uk).
We buy trackballs from a company called CKS (http://www.cksholdings.com/).
The golden rule with buying a computer is that the cheapest you can buy is
powerful enough to run 95% of
exhibits - spend your money on making it robust and on maintenance.
Hope this is helpful and best of luck with your project
Best Wishes
