The problem isn't with the email clients, but with the mailing list software
itself (assuming replies are meant to go to the list). It should substitute
whatever is in the Reply-To with the britarch list address (leaving the
sender's email in the From field). It would seem that the listserve only
puts its own address in the Reply-To if that field is blank when it left the
sender. As I demonstrated earlier, the listserve doesn't touch the Reply-To
if it has already been filled in by the sender's email client. (Hence, the
workaround of leaving it blank and only putting one's address in the From

Not sure if that's a common option (can't see it in OE). I've heard of some
clients that use the From field regardless, but, as you say, the Reply-To is
the correct one.
