Not animal bones but definitely bones in architecture:
The cathedral of Kutna Hora in the Czech Republic (see attached pic).
Not exactly architecture but bones used for decorative reasons:
The enormous amount of cattle skulls used to decorate the 3rd millenium BC
graves at Kerma in Sudan recently presented by Louis Chaix at ICAZ.
