I have the book, which contains nothing new for early spelt, but is
good on medieval and later history. The same publisher produced a
book on rye:

On the subject of French-language books, "Le livre de l'épeautre"
by B.Duplessy et al (Edisud, 1996) covers *einkorn* cultivation and
