Not prior to Hildegarde (unless I've got my dates hopelessly wrong), and
not actually canonized, but the Blessed Humility of Faenza fits your
description otherwise. Pietro Lorenzetti or someone easily confused with him
did a wonderful altarpiece showing scenes from her life including one in
which the illiterate Humility miraculously read to her sisters during the
meal, and others where she dictates and teaches, presumably based on her
miraculous understanding of scripture.
