The latest version of the GnuDraw package includes this option. After
installing GnuDraw, (see http://www2.tinbergen.nl/~cbos/gnudraw.html), a
program like

#include "gnudraw.h"

{
decl mY;
mY= rann(1, 1000);
DrawDensity(0, mY, "Normal", 1, 1, 1, 40);
SaveDrawWindow("hist.eps");
ShowDrawWindow();
}
would create an EPS file and show a plot on the screen, where the
histogram is using 40 bins.
