I've got a very simple answer. you can't.

p.s. the more complex answer is that that to delete contrasts you'd
have to do several things which make the process onerous.
1) reorganize the structures in xCon so as not to leave any gaps. So
if you have 4 contrasts and delete contrast 3, you'd have to move the
4th one into the 3rd slot.
2) Delete the associated disk files con*.img and spmT*.img and their
*.hdr files from the disk.
3) rename the remaining con and spmT files to now correspond to the
contrast structure that you've created. So if you've moved contrast 4
into the 3rd slot you have to rename these as con_0003.img. Now this
is not actually necessary because the references to those files are
still correct in the xCon structure but you'd be faced with the
situation of having contrast 3 in the contrast manager linked to
con_0004.img files on disk.
I'm sure there's more to do, but overall it's not a pretty story. The
only contrast that's reasonably easy to delete is the last one
entered for obvious reasons.
The best choice perhaps is to rename your contrast. You you can do in
the contrast manager either by right clicking on the frame or by left
clicking with the control button pressed depending on your system.
You could then name it to "Do not use this contrast" and then ignore
it.
