when you think about it ( which as an aspiring vegan I sometimes do), that
peasant black bread would have been surprisingly nourishing. Two if not
three different types of vegetable protein = the full range of amino acids,
vitamins, trace elements etc. etc. Full of beans. I think the real
nutritional problems come when people start getting ideas above their
station and want to eat wheat bread, white bread - but can't afford the
more expensive ways of getting your protein.
