Thanks, I've passed these along to my colleagues.
I should probably say that this is all in aid of an effort to create a
dinner "event" to a high standard of authenticity, and the ringleaders
of the enterprise are all food scholars (and damn good ones, if I'm
any judge). I am merely a small cog in this machine, and religious
practice is my particular assignment. The same group did a very
successful 1480s English feast a year or two ago, including
appropriate tableware, clothing, cuisine, linens, carving and food
service (just *before* Peter Brears' excellent book came out -- but we
were happy to see much of what we did confirmed by him). This next one
is planned for October 2010.
So far, treatises on food and feasting have produced lots of
interesting bits on the details of seasoning, garnishing, and exactly
how food is presented, carved and served, but there has been nothing
whatever on specifically *religious* rituals. They seem to have been
so taken for granted that no guidance was felt to be needed -- fine in
the 15th century, very frustrating to us now! I suspect that writings
on religous practice might be more fruitful than those on cooking and
feasting, though of course we are checking everything we can find.
