The expert on Italian medieval food is Massimo Montanari and you could try looking at his L'alimentazione contadina nell' alto medioevo (Turin 1979). I'm afraid I haven't done this myself (yet) but this is merely because I haven't been in the right libraries. I have heard it recommended warmly by several people. I believe one of his books has been translated into English, though I can't remember any of the details. It might also be worth looking at Settimane di Studio, vol. 37 (2 parts I think; Spoleto 1990), the proceedings of a conference called L'ambiente vegetale nell' alto medioevo, though I think one of the main themes here is trees.
