See S. Battaglia, _Grande dizionario della Lingua italiana_, which is
essentially the "OED" of Italian. Up to about vol. 19 now (around the S
letter), in process.

ALso, the _Glossario degli antichi volgari italiani_ (GAVI) ed. G. Colussi
which was up to the vol. St-SVU in 1997.  This may be too early for you,
however.
