There's a wonderful web site on the pilgrimage to Compostela at http://www.humnet.ucla.edu/santiago/iagohome.html My students found the visual aspects of the site very helpful in understanding medieval pilgrimages. Also, Margery Kempe's Book details her pilgrimages to Rome and Jerusalem.
