There are lots of programs for analysing Squid log files and sucking 
useful info out.  Take a look at <URL:http://squid.nlanr.net/> for 
some pointers.

If you want to hack your own stuff up, Calamaris may be a good
starting point - it's written in Perl.  We wrote a little gadget for
monitoring usage by IP address/network for the JANET Web Cache Service
which might be useful:
