Browsing through back numbers of Analecta Bollandiana will give you some impression of the number of publications on saints' lives, and of the difficulty anyone has in making a coherently structured bibliography of the subject. However I think you should also seek out the relevant pamphlets in the Typologie des Sources du moyen age occidental series (published by Brepols at Turnhout in Belgium). Several of them are devoted to different aspects of source material connected with saints' cults and each pamphlet has useful bibliographical material.
