I'm sure you've already checked it, but if I recall correctly, my Penguin edition of Gregory of Tours "History of the Franks" has quite a bit of background on Arianism, including summaries of some theological debates he had with some Arian bishops. My apologies if this is a little too basic, but I thought that maybe some of the non-scholars on the list might be interested.
