There is a paper by Reitz and Ruff with metric data from historical sites of the Caribbean and the Western coast of North America. It’s not European cattle but you might find some interesting stuff in there.

I´m going to measure Creole cattle bones from the 17th to the 19th centuries (Uruguay). Where I can find European cattle measures from that same time? Can you suggest papers or other works?
