I suppose the reason for this is that murder and stealing is something that is engrained in our culture, or the need not to do it at least.

Whereas respecting personal data is not and needs to be managed to make sure that people at least have an awareness.

By way of example, I can cite many instances where someone says something like “I just look at their files, what harm can it do”, or some variant. However, I have never met anyone who said “Yeah, I just stabbed him in the neck, I mean who cares right?”

Eventually protecting privacy and protecting data will be as “normal” as not killing thy neighbour, but that won’t be in my lifetime. Amen.

Simon.

I never really understood this. If it is about them following the law, why we do mention DP but not, for example, tell them not to murder or steal?

It's just a law. Usually, we tell them to abide by the law and tell them to.comply with policies and guidance, which should be given to all.

The only bespoke stuff I put in is about them as SIRO or IAO, so these are part of their contract. But that stuff depends on the organisation and what you need them to do.
