I use a Zoom H2N which is very good - it records stereo and in 4 channels should you every wish to do so.

You will need a cover for the microphone to stop wind noise. I somehow managed to lose mine but a ‘dead cat’ is a widely available accessory and perhaps might be necessary for the wind conditions in Argyll - better than the standard foam cover.

The only reservation I have about the Zoom is that it needs to be mounted on a tripod or stand as if you hold it while interviewing someone the noise of your hand can be picked up by the internal microphones.

If you don’t want to buy a dedicated device there are a number of accessories that turn a smartphone into a recording device - a decent external microphone plugged into an iPhone or Android phone might suffice. Speak to the Oral History Society.  There is some guidance on their website, but their accredited trainers have more in-depth guidance and suggest institutions to use the Zoom H5 as the benchmark.

I use (not for oral history) a Tascam DR-05 and it's superb. Dirt cheap too. It has decent twin mics built in and can take an external one too, but I think if you want to use two external mics you might need to go a couple of models up to the DR-40, still under £140. I believe you have 2 XLRs/3.5mm jacks for external mics. But perhaps a single stereo mic on the DR-05 will suffice. The built-in ones get great results anyway.
 
I can't comment on alternatives but people also swear by the Zoom recorders.
