Lots of Kiosk apps for iPad include scheduling/night mode features that let you set operating hours of the device. We mostly use Android tablets as Kiosk devices but there's Kiosk Pro and lots of others out there for iPads.

We’re not able to have them switched on 24/7 and due to staffing complexities there isn’t always someone available each morning to switch them on and have them set-up securely.
