The mesoamerican zooarchaeology community had been working on this for some time. See work coming out of UNA Merida.
I’ll look for some citations.
Also, look at the EARTH One and Two volumes that came out about four or five years ago published by the EU.

I am not familiar with this subject, but I can easily imagine various hooks and eyes, such as the uneven presentation of various vegetation types in archaeological context, with the underrepresentation of woody and dry environments, the import of crops AND weeds from abroad and the taxonomic identification levels that differ. Any references to relevant literature would be highly welcome, irrespective of the part of the globe reviewed, as there will be many common methodological aspects.
