The publication below contains a lot of measurements on cattle (15 more or less complete individuals, dated to the 4th century BC). I will send a pdf to Fabio, Haskel and Salima. If others want this too, just send me a note.

Actually, some 18 years ago A. Laudien did her PhD on the osteometry of Ancient Egyptian cattle (A. Laudien 2000. Osteometrische Untersuchungen zum “altägyptischen Langhornrind”. Unpubl. Thesis, Munich). Unfortunately, we do not have a pdf of this yet. But I will ask if it is possible to scan it.

 

As Sheila says, Boessneck and Angela almost always published the metrics. Unfortunately almost nothing is available as pdf. Here you can find their bibliography: https://www.palaeo.vetmed.uni-muenchen.de/download/publ_pal.pdf

 

Important sites where they worked are: Maadi, Merimde, Tuna el-Gebel, Umm el-Qaab, Elephantine, Tell el-Dab’a … among others. Then there is also the publication on the ox mummy in Munich (prob. From Saqqara):  Boessneck J. & von den Driesch A., 1987. Zoologisch-haustierkundliche Befunde an der Rindermumie. In: J. Boessneck  (Hrsg.), Die Münchner Ochsenmumie. Veerle published an osteometric study on African aurochs, which is probably of interest here: Linseele, V. (2004). Size and size change of the African aurochs. What about this one on researchgate - not a biblio collection but does concern cattle osteometry, 'The Wadi Khashab ceremonial complex — a manifestation of cattle keepers in the Eastern Desert of Egypt before the end of the fifth millennium BC'
likewise what about all those sites Boessneck and VDD did? they always have lots of metrics. If you want a synthesis I think you have to make it ;)
