Students from the Imperial College London have created open source software aiming to bring greater environmental control to disabled people. 

Use the likes of pointer controls (eyegaze etc.) to control the Alexa home-hub system with no need to use your voice. Robot arm control. An interesting idea for cooking (although maybe a bit risky). Open source for people to further develop as they wish.
