You may get some specific and expert answers from more learned listmembers,
but in the meantime by far the best general source on the history of
religious habits is in Italian:

    Giancarlo Rocca (ed.), *La sostanza dell’effimero: gli abiti degli
ordini religiosi in Occidente*: Catalogo: Museo Nazionale di Castel
Sant’Angelo, 18 gennaio-31 marzo 2000. Rome: Edizioni Paoline, 2000.

It is the lavishly illustrated catalog of an exhibition in Rome in 2000,
which included many historical artefacts and research-based
reconstructions. Unfortunately I don't have access to it now, and I can't
remember if it would answer your precise question. But if you can locate a
copy in a library near you it would certainly be worth looking at,
including for the illustrations and reconstructions. It includes an
extensive bibliography.

I wonder if Irish monastics felt bound by the dress prescriptions of the
monastic founders of antiquity? If so, it may be worth looking at
Pachomius, Cassian, &c. and the literature on them. Some examples;
