Flusurvey is well worth a look if you haven’t seen it already, also as an ongoing participatory citizen science type project: https://flusurvey.org.uk/

Not a visualisation, but something worth a mention anyway relating to flu, is the Wellcome Trust’s Sneeze game that was created as part of their Influenza special issue resource in 2009 https://bigpictureeducation.com/sneeze-game
