I am really pleased to hear you are thinking about getting feedback directly from children, rather than only having parents speak for them. The tendency to rely exclusively on adult proxy reporting for children is something I have been decrying
for years!
I have used a variety of techniques to gather feedback from children for these kinds of events and programmes. One of the more straightforward options is to use annotated drawings to see if they children are taking on board the key ideas that
you are hoping for. Here is an example of a pre-visit survey completed by a child as part of an evaluation of an HLF-funded project:
It is also feasible to set up automated online surveys for children above a minimum age threshold (with parental instructions to facilitate the feedback process).
Unfortunately, the set of options you mentioned below (e.g. sticky notes) are deeply problematic in terms of gaining accurate results. I have prepared a short blog entry to summarise the major issues, focusing mainly on sticky notes here:

Hi Gemmers,
Our museum is looking to update our feedback method for our family events. Do you have any tips on how to get children engaged in feedback? What does your museum do for event feedback?
We've had ideas about simply updating our feedback forms, perhaps setting up a board where people can put up sticky notes with feedback, perhaps buying a large clear box so that visitors can put a coloured token in the box so we can see the feedback
visually - so many different ideas!
