I use my D800 tethered to an early 2008 macbook pro running capture one 8.3 without any problems. I recently did a job where I needed to use both my D800 and a Canon 5D these worked fine together just by selecting the camera I wished to use.

You might want to have a look in preferences and try uninstalling cameras and getting the latest drivers for the camera.

Capture one 9.1 has its own engine for tethering Canons rather than using Canon so may work better.

Edward is right that you can only have Nikon OR Canon enabled at any one time.
