Could be worth looking at Keith Devlin, "Introduction to Mathematical Thinking", which "is written primarily for first and second year students of science, technology, engineering, and mathematics (STEM) at colleges and universities".  IT's a slim, cheap book but I haven’t yet explored it carefully.

I believe Susanna Epp’s book “Discrete Mathematics with Applications” has something of this focus.  She’s written thoughtful things in maths ed as well as producing this, and I haven’t looked in detail but I think it’s quite good - probably worth a look.
