John, Check Piketty et al.'s World Top Incomes Database, or the Technical Appendix to his book which is on the net. You want too much, John. I don't think there is such a database for EVERY country, and there is no such thing as the best in all the categories you mention. But you could have a look at the IMF, the World Bank, and the OECD data. For each, you must be careful. And do not trust any surveys.

Can anybody advise me on this please?: I'm wanting a spreadsheet listing every country with a large range of data for each (area, population, income, etc etc., with subcategories where possible). 

There are lots of possible sources. But which is the best, esp. in terms of range of variables, uptodateness, quality of metadata, etc etc?
