I just checked your data: your filtered_func_MNI is indeed only one volume.  There must be some problem in the way that you are transforming it.

where I registered the func_data set to an MNI template. I checked the filtered_func_data_MNI image and it contains the entire timeseries (1200 timepoints total), but I am still only getting 1 value in the ROI_meants.txt instead of 1200. I thought the information may be contained in the filtered_func_data.mat file, but this only includes a 4x4 matrix.
