For read image into Matlab, you can check rest_to4d (http://restfmri.net/pub/rest_20090422/doc/rest_20090422/rest_to4d.html).

Besides, there are a lot more alternatives, such as SPM's read/write functions, Tools for NIfTI and ANALYZE image etc..
