As far as the issue of sketching as pre literacy activity is concerned, a cognitive psychologist, John Peacock is known for his work on the 'languages of thought' which I can imagine could provide some meta theoretical underpinnings for looking at the developmental cognition of children. I also found the book written by the visual psychologist Massironi, M. 2002, 'The psychology of graphic images: seeing, drawing, communicating' extremely informative. It focuses on the historical development of the graphic mark as form of communication.
