I haven't done but I've often thought this would be good idea to try out.

I've seen £3000 spent on some miserable touchscreen software (only ever used the once) that could have easily been done with WordPress. In fact it would have been cheaper to get a developer to knock up a custom HTML site.

Strikes me that touchscreen friendly templates could easily be created and shared to be adapted and so on.

I'd be interested in hearing from anyone else that has tried it.

Would hosting your kiosk stuff online and feeding it out to kiosks via wifi be a practical consideration?
