Indeed, DPM-https is pretty much irrelevant now (as it's the old non-WebDAV https interface), so it's not a problem that it isn't configured.

The only prevalent problem is the database banning one (in the wiki article), which is indeed a head node only thing.

Thats fine - but they are the defaults so you can also just comment them out.

yes the EMI2 -> EMI3 transistion is very smooth (as they have the same stuff it it) 
Is it sufficient to remove the EMI2 repositories and use only the EPEL one?
probably not - if you use yaim you need the update to dpm-yaim from EMI. 
Also the metapackage is only in EMI but that depends how you update whether you need that. 
For now I would say having EMI as well as EPEL is recommended though with a puppet config you could maybe avoid it.

What do you mean? - perhaps I misunderstood your question. 
If you remove EMI2 and enable EMI3 and EPEL then that will be totally fine . 

I interpreted your question as asking if you could enable on EPEL and no EMI repo at all . 
That won't work if you use yaim .
