Could I please tighten the focus somewhat and ask the same question specifically for the 11th and 12th centuries? Anything pertaining to practices in Latin or Orthodox churches would be appreciated.

In Egypt during the 10th-13th century, it is said that, on workdays, Jewish services were held three times daily and the Muslims prayed five times a day. (Goitein, Medieval Mediterranean Society).
How often did Christians attend their churches and/or were expected to pray in this time period?
