We use the search function in eclipse with a few regular expressions to identify courses and modules and replace them (courses = modules and modules = widgets at londonmet) , though this is probably only a method that works well for existing eclipse users (ours is done by a member of staff who is mainly a java developer). Other packages can make similar changes though.

We search all files in the language pack, and only replace values on the right hand side of the equal sign in the config files, eg

=<strong>Warning:</strong> The Module is unavailable.
becomes
=<strong>Warning:</strong> The Widget is unavailable.

Overall this worked well for us, we tend to find one or two 'courses' or 'modules' that escaped, and we do the same for the help files.

Our internal 'readme' on how to change the Language Pack is attached, it includes the searches / replace we use and the order in which we do it (including a slightly lazy version of changing 'Learning Widgets' back to 'Learning Modules' instead of making the regular expressions more complex)
