Dear Victor, widly unknow is this book: Soja Stummerer / Martin Hablesleiter *food design XL *Wien New York 2010 (ISBN 978-3-211-99230-2, Springer) which is an excellent contribution to form and function in this field. During the discussion, he asked whether I thought that what the chemists were doing was design. I said that it was. They were manipulating materials to achieve a desired outcome.
