David Bradley (@sciencebase) rounded up some nutritional info on horsemeat http://www.sciencebase.com/science-blog/how-nutritious-is-horse-meat.html (though I was surprised there was nothing on the topic in McGee's 'on Food and Cooking'.

and dietitian Catherine Collins (@RD_Catherine) tweeted a paper on what happens to horses that are no longer needed:
