Hi All

Love Sue's recipe but if you try this one from the Hairy Bikers, you
have a lovely Xmassy drink and get tipsy enough to not care about JCQ,
Nick Lait, Exam Boards, Michael Gove, DfE, Ofqual, etc etc.

A friend made it last year and it is great!

Keep this delicious aperitif in the freezer for a refreshing - and
surprising - Christmas drink.

Ingredients
300g/10½oz mixed dried fruit (sultanas, currants, raisins)

75g/3oz caster sugar

2 cinnamon sticks

2 tsp ground mixed spice

6 cloves

½ whole nutmeg, finely grated

1 orange, zest only, finely grated

1 unwaxed lemon, zest only, finely grated

750ml/1 pint 5fl oz bottle good quality vodka

Preparation method
1.Mix the dried fruit with the sugar, cinnamon sticks, mixed spice,
cloves, grated nutmeg and citrus zest in a large bowl.

2.Pour over the vodka, and cover tightly with cling film.

3.Place in the fridge and leave for 3 days, stirring once each day.

4.Line a sieve with a double layer of fine muslin and place over a
large, clean jug.

5.Pour the dried fruit and vodka mixture into the sieve and allow to
drip through into the jug.

6.Pour into a sterilized bottle.

I think I would try to make a fruit cake with the fruit.

Have a happy Xmas

Marjanne

Dear All,

It's been a frustrating day and I think its time to share a smile
before we all go home, to hit our heads against a door/wall whatever
.................

It's that time of year again and, I've had requests for my Vodka
Christmas Cake recipe so here goes.
Please keep in your files as I am beginning to get tired of typing this
up every year!

 1 cup sugar,
1 tsp. baking powder,
 1 cup water, 1 tsp. salt ,
1 cup brown sugar,
 Lemon juice,
4 large eggs,
 Nuts,
1...bottle Vodka,
2 cups dried fruit.

Sample a cup of Vodka to check quality. Take a large bowl, check the
Vodka again to be sure it is of the highest quality then Repeat. Turn on
the electric mixer. Beat one cup of butter in a large fluffy bowl. Add 1
teaspoon of sugar. Beat again. At this point, it is best to make sure
the Vodka is still OK. Try another cup just in case. Turn off the
mixerer thingy. Break 2 eegs and add to the bowl and chuck in the cup of
dried fruit. Pick the fruit up off the floor, wash it and put it in the
bowl a piece at a time trying to count it. Mix on the turner. If the
fried druit getas stuck in the beaterers, just pry it loose with a
drewscriver Sample the Vodka to test for tonsisticity. Next, sift 2 cups
of salt, or something. Check the Vodka. Now shit shift the lemon juice
and strain your nuts. Add one table. Add a spoon of sugar, or somefink.
Whatever you can find. Greash the oven. Turn the cake tin 360 degrees
and try not to fall over. Don't forget to beat off the turner. Finally,
throw the bowl through the window. Finish the Vodka and wipe the counter
with the cat. Xx

Have a good evening everyone :)
