Just because it's more common doesn't make it right. In the same way that usage allows the use of -ise, -ising and -isation when the correct British English is -ize, -izing and -ization (except for those words derived from Latin).

 

The OED didn't even give organisation as an acceptable variant of organization until 1993.

Surely Gypsy is only capitalised when used as a proper noun, not as an adjective; you would not capitalise welsh rarebit, now there is a racial slur and a half!
