Have you tried discussing with a dietician? I appreciate he's not ingesting it, but my son used to react in the presence on baked beans, and his dietician informed me allergens can get through mucous membranes and cause a reaction.
 
Not sure if this is of any use with fish and asthma,

Subject: [OCC-HEALTH] Histamine allergy

Just wondering is anyone has come across this before, I have a man who has been seen by a specialist and told that his asthma is as a result of an allergy to histamine, and he works in a fish factory handling head on gutted fish.  I am aware of the toxin Scombrotoxin that induces the formation of histamine in fish depending on the temperature of the product and how fresh the fish is, but all the information I look at is with regard to fish ingestion and nothing to do with inhalation…has anyone come across anything similar or knows where I should be looking?
