Why wouldn't you want to demean?  See Jeanette Mumford's web page on
this.

Also, you need to include an intercept term in your model.  See
http://www.fmrib.ox.ac.uk/fsl/feat5/detail.html#SingleGroupAveragewithAdditionalCovariate
as an example.
