Also see Rick Altman 'Sound Theory Sound Practice', there is an edited collection by John Belton and Elizabeth Weis called 'Film Sound' that is an excellent starting point, Anahid Kassabian writes about the compiled music soundtrack, Amy Lawrence and Kaja Silverman have written on voice, also see 'Hearing the Movies' eds James Buhler, David Neumeyer and Rob Deemer for a good overview of sound design. Mervyn Cooke's 'A History of Film Music' is very comprehensive. Richard Dyer has just published a new book on song in film, Gianluca Sergi writes extensively on Dolby and the technical aspects of sound. Basically there's loads...more than you might think!
