We Chemists at UCL do a lot of ice cream demos for visiting school groups, as well as taking the ice cream out to schools to excite them about Chemistry.

For the ingredients, single / double cream and custard make an easy ice cream base. Equal amounts of each would be fine - they are usually sold in the same refridgerator in the supermarket, in same sized cartons. Add fruit and treats of your choice (we use raspberries or cranberries, and chocolate chips usually). Add liquid nitrogen for a 'normal' ice cream, or for fun, some completely smashed up powdered dry ice for a fizzy ice cream. Kids love it, because it's different, and they have seen it transform in front of their eyes. Please make sure that the dry ice pellets have been completely bashed into a powder, because otherwise they might get frostbitten if there are any clumps remaining. For this reason, LN2 is better.

In circumstances where you are unable to get hold of dry ice or liquid nitrogen, the method of placing the ingredients inside one sealed bag, and then placing this in a second supercooled bag (with salt, mentioned earlier) works a treat. Fun for picnics!
