Hello Zooarcher!

Can anyone point me in the direction of articles regarding the composition
of cattlebones from Medieval military garrisons? For example, would one
expect a lack of slaughter waste compare to food waste? Is it usual that
garrisons bred their own cattle? If the animals were reared on the
surrounding farms why not slaughter them there and just bring in meat-rich
parts?
