I really like the example of the Blue Headed Wrasse, which can change it's sex in order to make the best of reproductive opportunities on the reef:

Stephen Stearns uses this along with some other lovely examples in the introduction to his book on the Evolution of Life Histories:

Hi everyone,

I hope some of you might be able to help me on this very broad request! I  am
looking for interesting and unusual examples of how animals have  adapted to
their environments - the more surprising and bizarre the  better.

If you can think of any examples, or books or other resources that would be
strong on this topic, please do let me know off-list.

Many thanks,

Nicola
